This system enables you to easily reverse the flow in the front pan without ever moving the pan or dealing with plugs. Reversing flow is as simple as swinging the handles of two stainless steel ball valves. Our SSR System is the best in the industry. It is fully cross flow and has only one syrup outlet regardless of flow direction. The Same Side Reverse System (SSR) also works beautifully with the Smoky Lake Auto-Draw-off Systems.
(In contrast, our “standard configuration” Drop Flue Pan Set allows you to change direction of flow by turning the pan 180º.)

Regardless whether you have Forced Draft or Natural Draft, an airtight door increases efficiency. A leaky door works against you by allowing cold air to enter the firebox and cool your pans.
