An audible alarm will sound if your syrup temperature reaches or exceeds your safety
setting. The factory preset for this safety setting is 3ºF above your draw-off temperature.
Remember that the boiling temperature of maple syrup will rise as it becomes more dense.
You can familiarize yourself with this phenomena by taking refractometer or hydrometer readings of your syrup at different temperatures while boiling.
