Description
Install the cup simply by wrapping the flexible metal strap over the top edge of your pan. If you have a continuous flow pan, place the defoamer cup near the pan’s inlet port (the location in which sap enters the pan). Position the cup high enough to not come in contact with sap while it is boiling normally. Note that the attachment strap is flexible and customizable to fit any evaporator pan.
Before you start boiling, you will need to place a few drops of defoamer in the cup. There are commercial defoamers available on the market. However, all you really need is a few drops of organic canola oil or vegetable oil from your local grocery store. It is also possible to use a sliver of butter as defoamer, but keep in mind some folks are extremely sensitive/allergic of dairy products. If you are running an organic farm, choose an organic defoamer that does not contain allergens.
If your syrup tastes oily, you are using way too much defoamer. Remember that a little tiny bit goes a long way.
While boiling, sap has a tendency to foam up every once in a while without warning. However, as soon as the rising foam comes in contact with the defoamer in your cup, the foam will dissipate.
You will then need to “reset” your cup with a couple more drops of defoamer to safeguard against the next occurrence of foam.
In addition to using a defoamer cup, you may choose to help prevent foam from ever developing in the first place. Set an egg timer to remind you to add 1 – 2 drops of defoamer directly to your boiling sap about every 10 minutes. If you have a continuous flow pan, remember that defoamer needs to be added by the sap inlet, NOT by the draw-off. By using this approach, you will help prevent foam flare ups, and at the same time you will still have the defoamer cup working as a backup.
We have heard many tales of people who have forgotten to set their timer to add defoamer and were then caught off guard by foam. In those cases a Defoamer Cup would have been a helpful safeguard.
If unexpected foam causes sap to overflow your evaporator pan, the sap depth may get too low for safe operation. In that case, the intense heat from the firebox may scorch and warp your pans. There is no way to “fix” pans to make them look new again after they are scorched/warped. Hence, the Defoamer Cup is an effective and low-cost way to protect your evaporator pans/investment.
